We began production of spirits in July of 2017.
In October 2017, we opened the Compass cocktail bar & tasting room.
All of our spirits (Compass gins, vodka & whiskies) are made from Nova Scotian grown grains.
We produce all spirits from raw ingredients (grain / sugar / molasses)
Compass has a partnership with the Halifax Citadel for a unique barrel aging program & product collaboration for our line of Citadel aged spirits (Noon Gun Gin, Daily Ration Rum)
Compass uses local botanicals for our gin recipes wherever possible (juniper, cucumber, cilantro, ginger, butterfly pea flower)
For production equipment, we have a 500-gallon (1900L) mash tun, Four 1000-gallon (3800L) fermenters and two 500-gallon fermenters. Our still (named Tess) is a 500-gallon Vendome hybrid still made in Louisville, Kentucky with a 20-plate vodka column and gin basket
